Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 eggplant, diced
  • 2 zucchinis, sliced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 cups tomatoes, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

    Rinse the quinoa under cold water. In a medium pot, bring 2 cups of water to a boil. Add quinoa, reduce heat to low, cover, and simmer until quinoa is tender and water is absorbed, about 15 minutes.

    In a large skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until onions are translucent.
