
Mediterranean Turmeric Sardine Farro Bowl

Ingredients
- 1 cup cooked farro
- 1 cup cauliflower florets
- 1 cup cherry tomatoes
- 2 cups baby spinach
- 1 small cucumber, shaved into ribbons
- 1 tin sardines in olive oil, drained lightly
- 2 tbsp extra virgin olive oil
- 1 tsp ground turmeric
- 1/2 tsp ground cumin
- 1/4 tsp smoked paprika
- 1/4 tsp sea salt, plus more to taste
- 1/4 tsp black pepper
- 2 tbsp tahini
- 1 1/2 tbsp fresh lemon juice
- 1 tbsp warm water
- 1 small garlic clove, grated
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh dill
- 2 tbsp pumpkin seeds
- Lemon wedges, for serving

Preheat the oven to 425°F (220°C). Toss the cauliflower florets and cherry tomatoes with 1 tablespoon olive oil, turmeric, cumin, smoked paprika, salt, and black pepper. Spread on a sheet pan and roast for 12 to 15 minutes until the cauliflower is tender and lightly caramelized and the tomatoes begin to blister.

While the vegetables roast, whisk together the tahini, lemon juice, warm water, grated garlic, and a pinch of salt until smooth and pourable.

Warm the cooked farro briefly if desired. Divide the farro between two bowls and arrange the baby spinach, cucumber ribbons, and roasted vegetables on top.
