Ingredients

  • 2 salmon fillets (about 4 oz each)
  • 4 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, thinly sliced
  • 1/4 small red onion, thinly sliced
  • 1 avocado, sliced
  • 1/4 cup walnuts, roughly chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp dried oregano
  • 1/4 tsp sea salt, plus more to taste
  • 1/4 tsp black pepper, plus more to taste
  • 1 tsp capers (optional)

Instructions

    Preheat the oven to 400°F (200°C). Pat the salmon dry and season with a pinch of sea salt, black pepper, and dried oregano.
