Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 1 avocado, diced
  • 2 tbsp fresh lime juice
  • 1/4 cup cilantro, chopped
  • 1/2 tsp chili powder
  • Salt and pepper to taste

Instructions
