Ingredients

  • 4 large bell peppers (red, green, yellow, or orange)
  • 1 cup cooked quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

    Preheat the oven to 375°F (190°C) and prepare the bell peppers by slicing off the tops and removing the seeds.

    In a large skillet, sauté the onion and garlic until translucent. Add the quinoa, black beans, corn, chili powder, cumin, paprika, salt, and pepper. Mix well and cook for 5 minutes.
