Ingredients

  • 1 cup dried lentils, rinsed
  • 1 large eggplant, cubed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 can crushed tomatoes
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cinnamon
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Pomegranate seeds, for garnish

Instructions

    Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until onion becomes translucent.
