Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 tsp ground turmeric
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, sliced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving

Instructions

    Rinse the quinoa under cold water and drain. In a medium saucepan, bring water to a boil, add quinoa and turmeric, then reduce heat to low and cover. Simmer for 15 minutes until the water is absorbed.
